Easy Goan Brinjal Chilli Fry

Brinjal offers a great supply of iron and calcium. It is also available almost throughout the year. My husband does not like the taste of the vegetable too much and therefore I was inspired to create this easy dish with few ingredients that I had ready at home, to suit his taste buds.

Here goes :
1/2 Kg Big Brinjal(s)
A pinch of turmeric powder
Salt
Sugar
One green chilly slit
Onion
Capsicum (2 small or 1 big)
Recheado masala
Vinegar (Goa vinegar preferably)

Method:
Cut small cubes of the Brinjal (It only takes a few minutes) after washing the vegetable thoroughly. Apply salt and sugar (a little generously as you will be squeezing it out later). Set aside for an hour or refrigerate for a couple of hours depending on your convenience.

When you are ready, squeeze out the excess water and keep the Brinjal ready to fry.

Add oil in a frying pan, add onions and fry till light brown. Throw in the slit green chilly. Add finely chopped capsicum. Fry for a while. Add a pinch of turmeric powder and fry the onion and capsicum.

Now add the Brinjal in and fry for a bit. Cover till cooked. Stir occasionally. Do not add any water.

Now about 5 minutes before taking it off the fire add about one and a half tablespoons of Recheado masala. Mix it well. Taste and add salt if required. Also pour in a cap of vinegar.

Your Brinjal will taste tangy, a little sweet and perfectly edible with rice or chappatis.
